Tucked into a narrow shopfront below the cathedral, Pinch & Proof opened this spring with a 24-hour sourdough and a Saturday queue that already spills onto Bailgate.

Founders Mara and Joel left hospitality jobs in Nottingham to come home to Lincoln. "We wanted to build something that was ours, in the city we grew up in," says Mara.
